Potato Leek Soup


Ingredients :
Leeks - 2 (medium size, sliced)
Potatoes - 1 Large (cubed)
Onion - 1 large (sliced)
Thyme - fresh (2 tsp) if dried (1/2 tsp)
Vegetable/Chicken stock - 2 cups
Oil - 1 tbsp
Freshly Ground Pepper 
Fresh cream (optional)
Salt - to taste

Procedure :
  • Heat oil in a pressure cooker and add the leeks and onions.
  • Cook for 4-5 minutes till they soften.
  • Add the vegetable/chicken stock and the cubed potatoes.
  • Add salt, pepper and thyme.
  • Pressure cook for 5 minutes on full flame. Reduce heat to medium and cook for another 2 minutes.
  • Remove from flame and let it cool.
  • Using a hand blender blend till smooth. 
  • Reheat in a pan and add some fresh cream. 
  • Serve hot.
