Homemade Vegetarian Quesadilla.

Ingredients :
Large flour tortillas 
Grated cheese/cheese slice
Salt
Black Pepper
Olive oil

For Stuffing (optional) :
Mushrooms
Onions
Spring Onions
Tomatoes 
Olives
Sweet Corn (boiled)
Bell Peppers

Procedure : 
  • Finely chop all the vegetables for the stuffing.
  • Heat oil in a frying pan, saut√© the onions, spring onions, mushroom, bell peppers, sweet corn and tomatoes. Add olives in the end.
  • Sprinkle salt and pepper. Turn off the heat and set aside.
  • Preheat a lightly greased skillet over medium heat. 
  • Place the tortilla in the skillet and flip it once to ensure an even coating of oil on both sides. 
  • Let the tortillas toast for about 30 seconds before flipping it onto the other side. Air pockets should begin to form within the tortilla.
  • Now spread the vegetable stuffing evenly on the tortilla and top it with some generous amount of cheese. 
  • When the cheese is melted, carefully fold the tortilla in half and toast either sides till its lightly brown and crisp. 
  • Remove from the pan and cut it into wedges.
  • Serve hot with salsa.
