Healthy Whole Wheat Apple, Apricot & Raisin Pancake.

Ingredients :
Eggs - 4
Whole Wheat Flour - 1 1/2 cup
Milk - 1 cup
Baking Powder - 1/4 tsp
Cinnamon - 2 tsp
Ground Ginger - 1/8 tsp
Vanilla Extract - 1/2 tsp
Dry Apricots - 4-5 (finely chopped)
Raisins - 10-12 
Apple - 1 large (peeled , cored and thinly sliced)
Salt - 1/2 tsp

Procedure :
  • Sift together flour, baking powder, cinnamon and salt.
  • In a separate bowl, whisk eggs and vanilla extract. Add to flour mixture.
  • Add chopped apricots and raisins. Mix.
  • Gradually add milk, stirring till the batter becomes smooth. If the batter seems too thick to pour, add a little more milk.
  • Let the batter rest for 10-15 minutes.
  • Heat a non-stick pan on medium heat and pour 1/3 cup of batter on the pan. Once small bubbles appear on the surface, place apple slices and then flip. Cook on the apple side for 3-4 minutes or until golden.
  • Enjoy them with fresh cream, a drizzle of maple syrup or spread with mixed-fruit jam.
