Curd Rice. Simple, Healthy Yet Delicious.

After an entire week of notoriously spicy food this is what we needed. Curd rice has this really nice cooling effect on your digestive system. There are numerous variations of making curd rice and each one tastes as good as the other.  The one below uses pomegranate which is my favourite variation as I simply love crushing them with my teeth and savouring their sweet-tart juice.

Ingredients :
Boiled Rice - 1 cup
Curry Leaves - 6-7
Mustard Seeds - 2 tsp
Curd - 2 cups or more
Coriander Leaves - 2 tbsp (finely chopped)
Green Chillies - deseeded & finely chopped
Salt - to taste
Oil - 1 tbsp
Pomegranate - 2 tbsp

Procedure :
  • Boil rice and let it cool.
  • In a small saucepan (tadka pan), heat oil and add the mustard seeds, just as they begin to crackle, add curry leaves, coriander and green chillies.
  • Pour this mixture on top of the boiled rice. Mix well.
  • Add curd, salt and pomegranate.
  • Serve with a splodge of pickle and some crisp papad.
