Bharwa Baingan (Stuffed Eggplants)

Ingredients :
Small Eggplants : 6-8 
Asafoetida (Hing) - 1 pinch
Cumin seeds - 1 tsp
Red chilly powder - 1 tsp
Turmeric - 1 pinch 
Coriander powder - 1 tbsp
Garam masala - 1 tsp
Cumin Seeds - 2 tsp
Mango powder - 1 tsp
Lemon juice - 2 tsp
Fresh Coriander leaves
Salt - to taste
Oil - 1 tbsp 

Procedure :
  • Wash and partially split the eggplants into four parts while keeping the top intact like forming a cross.
  • Mix all the ingredients (cumin seeds, red chilly powder, garam masala, coriander powder, turmeric, mango powder, salt and lemon juice) to prepare the filling. 
  • Now apply this mixture on the insides of the partially split eggplant.
  • Shallow fry the stuffed eggplants on medium low flame while keeping it covered by lid. Make sure to turn the eggplants from time to time so that they are cooked evenly.
  • Now add 3/4 cup of water and the remaining masala. Cover and let it cook for 10 minutes.
  • Garnish with coriander leaves and serve hot with chapati.
