Pasta Arrabiata

Ingredients : 
Pasta - 250 gms (penne/spaghetti/fusilli)
Onions - 2 (large)
Fresh tomato puree - 6 (medium) 
Garlic - 10 cloves (chopped)
Dried red chillies -1 tsp (crushed)
Oregano - 1/2 tsp
Parsley - 1/2 tsp
Basil - 1/2 tsp (fresh or dried)
Salt - to taste
Olive Oil - 3 tbsp

Veggies you could add :
Bell peppers
Baby corn

Garnishes :   
Black/Green olives 
Grated Cheese - if desired

Procedure :
  • Boil pasta in plenty of water with salt and a teaspoon of oil till al dente which means cooked so as to be firm but not hard.
  • Drain the water and set the pasta aside to cool.
  • Heat oil in a deep frying pan and add finely chopped garlic cloves and chopped onions.
  • Sauté till it turns soft and translucent.
  • Add black pepper, oregano, basil, parsley and red chilly flakes.
  • Now add tomato puree and mix. Add salt.
  • Cook till the oil starts to separate. Stir occasionally.
  • Now add the chopped vegetables. Sauté for 5 mins and then add the boiled pasta.
  • Mix carefully so as not to break the pasta.
  • Garnish and serve hot.
PS : Soak mushrooms in hot water for 10-20 mins with a pinch of salt before cooking. It cleans and removes the dirt easily.
