'Zamru Thool' (Egg Fry)

Zamru Thool is a kashmiri based egg curry.
Eggs - 6
Tomatoes (chopped) - 3 (medium sized)
Onion (chopped) - 3 (medium sized)
Red chilli powder - 2 tsp
Black pepper powder - 1/4 tsp
Fennel (saunf) powder - 1 tsp
Ginger (sund/shonth) powder -1/2 tsp
Cumin seeds - 1 tsp
Garam masala - 2 tsp 
Fresh coriander (chopped) - 1 tbsp
Green chillies - 2
Oil - 2 tbsp
Salt - to taste

Procedure :
  • Boil the eggs.
  • Drain the water and let them cool. 
  • Peel the eggs and then make little pricks in them so that they don't  burst while frying.
  • Heat oil in a pan and deep fry the boiled eggs till they turn brown.
  • After frying keep them aside in a separate bowl.
  • Now using the same frying pan with about 1tbsp of hot oil in it (drain the excess oil), add cumin seeds and green chillies (slitted) and allow to splutter. 
  • Add the chopped onions and fry till golden brown. 
  • Add the tomatoes and fry till the oil starts to separate. 
  • Now add red chilli powder, ginger powder, fennel powder, salt and one cup of water.
  • Cook till the gravy thickens a little. 
  • Add the fried eggs.
  • Gently stir in the eggs and cook till the oil surfaces on top. 
  • Garnish with coriander and serve hot.
