Recipe for Seyun Kaliya. Yellow Meat

Seyun Kaliya (yellow meat) is a Kashmiri preparation.

Ingredients:
Mutton - 1kg
Turmeric (haldi) - 1/2 tsp
Fennel (saunf) powder - 4tsp
Dry Ginger (sund/shonth) powder -1tsp 
Cumin seeds (zeera) - 1-2 tsp
Roasted cumin (zeera) powder - 1 tsp
Black Cardamom (badi elaichi) - 5-6  (ground)
Green Cardamom (elaichi) - 5-6  (ground)
Cinnamon (dal chini) - 1/2 tsp
Bay Leaves (tez patta) - 3-4
Cloves (laung) - 2-3 (ground)
Garam masala - 2 tsp 
Coriander (dhaniya) powder - 1tsp
Milk - 1&1/2 cup
Oil - 1tbsp
Salt - to taste

Procedure: 
  • Heat oil in a cooker. 
  • Add laung, zeera and pepper to it. 
  • Now add mutton and fry till it turns light brown. 
  • Add haldi and gently mix. 
  • Now add some water and the rest of the masalas (tez patta, badi elaichi, elaichi, saunf, shonth, dal chini, roasted zeera powder and salt to taste). 
  • Pressure cook for 8-10 mins and then reduce the flame.Cook till the mutton is soft and tender.Do not over cook. 
  • Now add milk. Stir gently.
  • Add garam masala and dhaniya powder.
  • Cook for a few minutes so that the mutton absorbs the flavor.
  • Serve hot.
